Alcine is close to completing her PhD under Associate Professor Liu Shao Quan at the National University of Singapore. She specialises in developing non-dairy food matrices as probiotic delivery carriers, having worked intensively on coffees and beers since her undergraduate days. Her core research involves formulating foods to enhance probiotic viabilities, and coupling metabolomics and in vitro tools to substantiate probiotic functionalities in new food matrices. As a foodie, Alcine believes that our shared love for food is key in unlocking the benefits of probiotic consumption to mainstream audiences.
